dc.description	This study was conducted toevaluate the quality of cow's milk in Kosti city, which is distributed to the consume in a traditional way by peddlers.The objective of this study is to evaluate the quality of cow's milk and toknow the adulteration thatmay occurs to the raw milk distributed by peddlers in Kosti city.Physicaland some important chemical properties, mainly protein, fats, lactose and Solid not Fat(SNF) were done to the raw milk.Thirty(30) samples of raw milk from different areas around Kosti city were collected to study the quality of milkby using some laboratory tests for physical and chemical properties. The results showed that thepercentage of protein is 3.2-3.6 % (73.3 %), fats is 3.2- 5 % (86.7 %), lactose is4.6- 4.8 % (40 %) and Solid Not Fat (SNF) is 8.5 % (100 %) for chemical properties, while for physical properties like color test and general appearance are accepted by the consumers. These results showed that the composition of milk were in agreement with the standards set by the Food and Agricultural Organization (FAO),World Health Organization (WHO) and Sudanesestandards and measurements organization, except that there is a rise in mastitis disease for all cows under the study.	en_US
dc.description.abstract	أجري هذا البحث لدراسة وتقييم جودة حليب الأبقار في مدينة كوستي والذي يوزع بواسطة الباعة المتجولين.ويهدف هذا البحث إلى تقييم جودة حليب الأبقار ومعرفة مدى التلاعب (الغش) الذي قد يحدث في اللبنالحليب المعروض لمواطن مدينة كوستي وذلك بإجراء التحاليل الفيزيائية وتحليل المكونات الأساسية (البروتين، الدهن، اللاكتوز وSNF).تمت دراسة جودة الحليب الخام لـ 30 عينة من حليب الأبقار جمعت من المناطق موضع الدراسة حول مدينة كوستى ومن ثم أخضعت لاختبارات معملية لمعرفة الخصائص الفيزيائية والكيميائية لللبن. اظهرت النتائج ان نسبة البروتين هى 3.6-3.2(%73.3)والدهون5-3.2 (% 86.7)وسكر اللاكتوز4.8-4.6 (40 %) والمواد الصلبة اللادهنيةSNF 8.5 (100 %),اما الخصائص الفيزيائية كاللون ودرجة القبول العام فكانت مقبولة من قبل المستهلكين.هذه النتائج اظهرت مطابقة تركيبة عينات اللبن للتركيبة الطبيعية للبن حسب المواصفة الموضوعة من قبل منظمتي الغذاء والزراعة العالمية (FAO)ومنظمة الصحة العالمية(WHO)والمواصفات القياسية السودانية،عدا ان هنالك ارتفاع في التهاب الضرع بصورة كبيرة حيث ظهر في جميع العينات مما يثير تخوفنا الكبير تجاه صحة مواطن مدينة كوستي.	en_US
