Abstract:
This research at sugar factory in Asalayah and discussed the stages of the sugar industry from cane in simplified and concise manner through this study we have learned about the stages of this industry and how it works each stage.
The focus and its effect on the industry in particular the chemical purification phase.
The idea of this research result of the importance of sugar which is used in many food industries.
So it was necessary to study this loss and reduced it
to increase production rate and how to avoid this loss and
we found that:
- that 5083.96 Ton we found during the day we product 629.39 Ton of sugar and lost about1.195Ton during the manufacturing process.
- We also conclude that the amount of sugar lost during the extraction process is about 0.468 Ton, The loss during the treatment process is 0.122 Ton finally it is lost about 0.605
Ton of sugar with final molasses.

لقد جاءت فكرة هذا البحث نتيجة لأهمية السكر التي يتم استخدامها في كثير من الصناعات الغذائية لذلك كان لابد من دراسة هذا الفقد والتقليل منه لزيادة معدل الإنتاج وتلافي هذا الفقد وكيفية معالجته ووجد أن :
عند طحن حوالي 5083.96 طن من القصب في اليوم ينتج حوالي 629.39 طن من السكر ويكون الفاقد خلال العملية التصنيعية حوالي 1.195 طن .
يتم فقد حوالي 468. 0 طن خلال عملية الاستخلاص وكان الفقد خلال عملية المعالجة حوالي 122. 0 طن وقدر اكبر فقد مع المولاص النهائي وقدر بحوالي 605. 0 طن .
