Abstract:

البلح فاكهة لذيذة المذاق ويتمتع بقيمة غذائية عالية , بالإضافة ألى أن السودان ينتج كميات كبيرة من البلح , ما يفوق 300000 طن سنوياً. الأسباب أعلاه كانت دافعاً لهذه الدراسة التي هدفت إلى تصنيع نوعين من مربى القرع أستخدام سكر القصب في تحلية أحدهما وأستخدم شراب البلح السوداني (صنف ود لقاي) في تحلية النوع الأخر بتراكيز (25%, 50%و 75%, 100%) في تحلية النوع الأخر. كما هدفت الدراسة إلى عمل تحاليل كيميائية لأصناف المربى المنتجة لمعرفة قيمتها الغذائية , وكذلك عمل التحليل الحسي لتلك الأصناف لمعرفة مدى قبول المستهلك لها , ثممقارنة أصناف المربى المنتجة. وُجد أن المربى التي أُستخدِم في تحليتها شراب البلح بنسبة 100% تحتوي على أعلى نسبة من المعادن (1.40%)البروتين( 2.03%), الدهون( 0.44%), والسكريات الأحادية( 48.3%) مقارنةً مع بقية المربيات, هذه النتائج كانت مرضية جداً. كذلك وُجد أن المربى التي أُستخدِم في تحليتها شراب البلح بنسبة 50% تحتوي على أعلى رقم هيدروجيني PH مقارنة مع بقية المربيات المنتجة. من ناحية أخرى وجد أن المربى ذات التحلية (1:1) (شراب البلح : سكر القصب) قد نالت أعلى قبول للمحكمين من حيث القوام, اللون, النكهة, والقبول العام . بينما المربى ذات التحلية 100% شراب بلح قد نالت القبول الأعلى من حيث الطعم. بينما حصلت المربى الخالية من شراب البلح على أقل تقييم حسي. بالرجوع للتحاليل الإحصائية للتقييم الحسي وجد أنه لا توجد فروق معنوية بين المحكمين عند درجات الحرية 0.05 و 0.01 في القوام, اللون, الطعم, النكهة, والقبول العام. وجد أن هناك فروق معنوية بين العينات عند درجة حرية 0.05 وهناك فروق معنوية عالية بين العينات عند درجة حرية 0.01 في القوام, اللون, الطعم, النكهة, والقبول العام.

Description:

Date is a delicious fruit with a sweet taste, and it had a high nutritional value, Sudan produce more than 300000 ton of date yearly. For the aforementioned reasons this study aimed to process two types of jam of pumpkin fruit, use cane sugar to sweetness one of them, and use a Sudanese date syrup (kind Wad-laggai) to sweetness the other by concentrate (25%, 50%, 75%, and100%), to make a chemical analysis for date and jam manufactured, to make a sensory evaluation for all types of jam produced, and to make a comparison between types of jam manufactured for nutritional value and sensory characteristics. Jam that sweetens by concentrate (100%) of date syrup was found to contain high level of minerals (1.40%), protein( 2.03 %), lipids(0.44 %), Reducing sugar (48.36 %) and total soluble solids( 51.75 %), these results were too satisfaction. And jam that sweetens by concentrate 50% of date syrup was found to contain high level of PH.The jam with (fifty: fifty) date syrup and sucrose was found superior in texture, color, flavor, and over all acceptability. Jam that sweetens by concentrate (100%) of date syrup was found superior in taste. Jam with (0%) date syrup was found least in texture, color, taste, and overall acceptability. At reviewing the statistical analysis for sensory evaluation found no significant difference between the panelists at 0.05and 0.01 degrees of freedom for texture, color, flavor, taste, and over all acceptability. Found a significant difference between samples at 0.05degree of freedom and high significant difference at 0.01 degrees of freedom.
